Piedra de Plata is a provenance that has captivated the luxury chocolate market. We were able to obtain cocoa beans from a cousin from the area and made some truly outstanding bars. Before making the bars, we aged the refined chocolate in a palo santo chamber for 1 year to impart pine and minty notes to the chocolate. This process made the chocolate a bit creamy due to the exposure to the light humidity of the wood. The finished bars are then stored in an air tight container with palo santo to give them a wonderful, deep resin fragrance and taste coating.
Our tasting Notes:
Aromas: Sweet banana, vanilla, coconut and cinnamon.
Flavors: Banana pudding flavors at first, opening up to mellow bitterness that turns into rich chocolatey flavors with dried berries notes.
Finish: Mocha, vanilla, faint coconut and dried berries.
Ingredients: Heirloom Cacao Nacional beans, cocoa butter and cane sugar.
