Hacienda San Ignacio is the property of Rolando Montesdeoca, our owner's cousin, who grows a small amount of cacao and also happens to be a craft chocolate maker and a cacao hunter (a person who identifies unique, heirloom cacao varietals). We buy the beans directly from him.

Ingredients: Cacao arriba beans, organic cane sugar, and San Ignacio cocoa butter.
